Curry leaf is a common ingredient in the cuisine of south Asia. Especially indian and burmese cuisine.

The flavor is little bit bitter and velvety. In cambodian cuisine, the leaves are slightly roasted and added in a sour soup.

I use it with galangal, garlic, red chilli and coconut milk for a fish or chicken amok.

Oui, bien sûr, les feuilles de caloupilé me rappelle trop celles que nous avions fraîches dans le jardin à la Réunion. Une petite cuiller à soupe de purée de tamarin donne un petit goût "acide" qui confère au massala (le nom du curry dans les pays du sous-continent Indien) un goût inoubliable. N'oubliez pas le piment !! Merci pour mes futurs "Massalés".

Ce n'est pas du kaloupile de la Réunion qui est le meilleur, Dommage !
